Grandpa Branham's Peppered Pork Tenderloin

Oh man did I get a gem this weekend.  When I arrived at my brother's house he had a special treat that had been slow cooking all day waiting for us!  He asked me if I had ever remembered eating Grandpa's poor boy sandwich before.  I remember eating so many things at his house but I couldn't place this dish...until I put it in my mouth...this was one that taste just like their kitchen.  Some foods just take you back!  Grandma and Grandpa LOVED pepper rings, and this dish is so easy and simple to make, you all have to try it!
Dad and Daine (my brother) say that Grandpa made this one up himself, which doesn't surprise me!  He knew good food!

This is all there is to it:
In a crock pot, place 1 pork tenderloin. (Daine bought the biggest one he could find to feed 12 people).
Over the top pour 1 large jar of mild pepper rings.  Let this cook all day and then just stir it to pull it apart.  He served it up Poor Boy style on a hoagie bun.  It didn't need another blame thing on it - it had so much flavor, but you can dress this sandwich up any way you like.  I know Grandpa would have!

Turnberry Sandwich

This is my favorite turkey sandwich! (This week anyway!) We had a Deli in Iowa that was just nummy!  Everything there was delicious.  They served this sandwich and It is perfect for Holiday leftovers!

Using your favorite wheat berry bread, on one slice spread softened cream cheese.
Layer with yummy leftover turkey.
On the opposite slice of bread, spread on cranberry sauce. Stack it all together and eat up! YUM!
So delicious!

Turkey Sandwich with Braswells Dressing

Here is my latest Yummy Sandwich.  I recently picked up some new Salad Dressings at Central Market.  Im sure these are probably found at many different grocers. The Braswells's brand has many different types of dressings but the one used here is called Vidalia Onion & Summer Tomato. You can buy the dressing at the Braswell's website link above.

I actually tried this dressing on a sandwich because I was out of my bread and butter pickles and I wanted to throw a kick into my sandwich that was  a little bit sweet.  It turned out to be really yummy and I have this for lunch often!


Here is the very simple process!
On Wheat Bread, I spread Hellmann's on both sides.











I layer one slice of Colby Jack Cheese - today it was Sargento.

 On top of the cheese I layer mesquite smoked or hickory smoked turkey.

On top of the turkey I spread the Vidallia Onion and Summer Tomato Dressing!



Put the lid on your sandwich and Enjoy!

Apple Butter and Golden Delicious Smoked Turkey Panini Sandwich

8 servings

1 loft of asiago take and bake bread
1 pound of golden delicious apples
1 jar of Amana natural apple butter
1 pound of smoked turkey
12 pieces of provolone cheese

1. Core the apples - it takes two apples for 8 sandwiches, then slice apples in rings.
2. Soak the apple rings in a bowl with 1 1/2 cup of cold water and a shot of lime or lemon juice. (to prevent from turning brown)
3. Slice your bread in 1/2 inch slices. You should be able to get 16 slices.
4. After slicing lay all of them flat and coat with apple butter, the more the better!
5. Then tear cheese in half and form to the bread 1 1/2 pieces for each sandwich.
6. Then place on the apple slices - 3 is best for each sandwich.
7. Add smoked turkey.
8. Then the other piece of bread with apple butter on it!
9. Get saute pan hot with vegetable oil, get it hot and then sear your sandwiches to golden brown, both sides make sure the cheese melts good!
10. Serve with chips!

Drew's Secret Ingredient Chicken Salad

2 Pounds of Cooked/Diced Chicken
Red Grapes halved

Diced Red Onion

Diced Celery

1 cup of Mayonnaise

1 Tablespoon of Secret Ingredient (Ranch Dressing!)

¼ tsp Salt

¼ tsp Pepper

¼ tsp Celery Seed

¼ tsp Granulated Garlic

Sliced Almonds (if you wish!)


Combine together in large mixing bowl, mayonnaise, secret ingredient, salt, pepper, celery seed, & garlic. Pour in chicken, grapes, onion, & celery and mix together. Top with sliced almonds if you desire.


~Serve on wheat rolls or bread and enjoy!~

Dara's Notes: Drew is the Head Chef who just opened up the new Market at Jordan Creek. We are the fortunate people who go to church with him and if your lucky enough to pick the life group he visits you just may get to sample his famous BBQ sauce - that is probably at the market now too - but this is the Chicken salad that you have all heard me go on and on about.
